Buckwheat
Fagopyrum esculentum
別名 三角麥、烏麥
蕎麥名稱裡有「麥」，植物分類上卻屬蓼科而非禾本科，與小麥、大麥沒有親緣關係。種子呈三角形、外覆硬殼，去殼後可磨粉食用。這個分類差異，正是它經常出現在無麩質配方討論裡的原因。
